1tsp turmeric powder
1 onion (chopped)
100g tamarind paste
1 1/2tsp garam masala
1tsp coriander powder
2 green chillies
5 garlic cloves (sliced)
Chop aubergine in diagonal length and add 1tap oil and the turmeric powder. Mix well.
Start frying the aubergine in shallow oil. Once browned remove and set aside.
To the remaining oil, if any, add the chopped onion and cook until translucid. Then add the garlic and mix well. Add salt, garam masala, coriander powder and ginger/garlic paste and cook for a minute in medium/low heat.
Prepare the tamarind by soaking it in water and de-seeding it.
Then add the tamarind paste to the pan and cook for 2 minutes.
Finally add the aubergine to the sauce and cook or 4 minutes in low heat. Finish it with half a teaspoon of sugar and fresh coriander.
