Quimbolitos

600g corn starch/corn flour (approx measure)-(also called Maicena in some south-american countries)
200g pre-cooked corn flour (also called maiz-sabrosa)
14 eggs - Separate whites from yolks
20g baking powder
1tsp vanilla extract
600g cheese - (ceddar or feta or a mixture)
2 or 3 raisings per quimbolito 15/20 banana leafs / hojas de achira or alternatively foil
Instructions
Prepare your ingredients first, crumble the cheese and put the raisings in the a bowl and clean your banana leafs (hojas de achira)
Mix the butter and sugar together until sugar is completely dissolved. This might take a while specially if you do it by hand but it is the most important step. So you really need to beat this together until is all well combined and you cannot feel any grains of sugar.
Once the sugar is dissolved start adding the egg yolks, one at a time while mixing. When you have mixed all the yolks set aside.
Beat the egg whites until you get stiff pikes and set aside.
To the butter mixture add 3/4 of corn flour and mix until you get a smooth batter. You will get a nice thick/cake looking batter. Then add the vanilla extract and mix well before adding the egg whites.
Finally add the pre-coocked corn flour and you'll be ready to assemble.

Once you have all of your quimbolitos assembled you are ready to steam them. Steam them for about 15/20minutes. They will be ready when they come out easily from the banana leaf.

450g mantequilla
300g azucar
600g maicena - Almidon de maíz
200g harina de maiz precocinada
14 huevos - separados entre clara y yema
20g polvo de hornear
1cdita extractoo de vainilla
600g queso
2 o 3 pasas por quimbolito
15/20 hojas de achira
Preparacion
Bate la mantequilla y el azucar hasta que esta se disuelva completamente. Este es el paso mas importante y lo puedes hacer a mano o con una batidora electrica.
Cuando el azucar este disuelta empieza a anadir las yemas una por una batiendo bien. Luego anade el almidon de maiz hasta conseguir una masa un poco espesa y deja reposar.
Mientras tanto bate las claras de huevo a punto de nieve.
A continuación, agregue el extracto de vainilla a la masa y mezcle bien antes de agregar las claras de huevo.
Finalmente agregue la harina de maíz precocida y el resto del almidón y estará listo para armar.

Una vez que tenga todos tus quimbolitos ensamblados, estarás listo para cocinarlos. Cocinalos al vapor durante aproximadamente 15/20 minutos. Estarán listos cuando salgan fácilmente de la hoja de plátano.
